Tip: For modeling larger decorations, it is recommended to let the mass dry slightly or add a little sugar/cornstarch.
Use creams with low water content, for example:
Butter pudding cream
Ganache
Not suitable: whipped cream, mascarpone, cottage cheese, sour cream, yogurt. High water content can cause the covering to dissolve.
Allow the mass to reach room temperature.
Cut the desired amount and work it until pliable.
If too firm, heat in the microwave for 5-10 seconds.
Roll out on a surface about 4 mm thick and slightly larger than the diameter of the cake + height.
Transfer to the cake (by hand, rolling pin, or using a silicone mat).
Smooth with a cake smoother, trim excess.
After opening, store in a plastic bag and a sealed container to prevent the mass from drying out and hardening.
Store in a dry, cool place, away from direct sunlight.
