
Macaronmix - white mixture for making Macarons
Macarons are the pinnacle of pastry art. Their traditional production is not easy at all. It depends on each ingredient and technological process. With the help of our complete Macaron Mix, you will make these favorite almond sweets exactly as they should be - smooth on the surface, without cracks, crispy on the outside and soft on the inside, airy, with a pleasant almond flavor.
Classic macarons play with colors, are usually filled with filling coordinated in color with the macaron. Macarons can also be used as a decorative element for pastry products, especially cakes and mini desserts.
The mix can be colored with food coloring.
Ingredients: sugar, almonds (22%), wheat starch, dried egg white, vegetable oil (rapeseed), emulsifiers (E472b, E477), dried glucose syrup, skimmed dried milk, thickener E415, salt
Allergens: cereals containing gluten (i.e. wheat, rye, barley, oats, spelt wheat, kamut or their hybrid varieties) and products thereof, glucose syrup made from wheat starch and cereals used for making distilled spirits or ethyl alcohol of agricultural origin for alcoholic beverages, eggs and products thereof, may contain traces of soybeans and products thereof, milk and products thereof (including lactose), tree nuts (i.e. almonds, hazelnuts, walnuts, pistachios...)
Instructions:
Macarons: 500g Macaron Mix, 100g water - Mix the ingredients with a mixer on 2nd speed for 5 min. Pipe onto a baking sheet lined with a silicone mat approximately 120 macarons (about 10g of batter each) and let dry for about 1 hour. Bake at 140-150°C for about 25 min.
Filling: 100g Macaron Mix, 125g butter, 10g Compound (flavoring) - Mix room temperature butter with the mix and Compound flavoring paste.
Assembly: Fill the cooled macarons with filling (4g) and cover with another macaron.
